Welcome to The Taco Stop, where every taco tells a story. We are a Mexican restaurant deeply rooted in tradition and inspired by the vibrant culinary heritage of Mexico City. Our CO founder, Cesar, embarked on a journey from Mexico to the United States, bringing with him a passion for authentic Mexican cuisine that shines through in every bite. Humble Beginnings
In 2012, Cesar and Berenice took their first step towards making their dream a reality by starting a taco cart. Their authentic recipes and dedication to quality quickly won over locals. Encouraged by their growing popularity, they expanded to a trailer in 2015, bringing their mouth-watering tacos to even more people. In 2018, the duo took a bold step by launching a food truck. Little did they know that the challenges of the COVID-19 pandemic were just around the corner.
Rising Above Challenges
In 2020, Cesar and Berenice opened the first restaurant during the height of the pandemic. Despite the difficulties, Cesar and Berenice’s resilience shone through. Their restaurant became a beacon of hope and a source of comfort for many during uncertain times. However, on May 26, 2024, this restaurant closed its doors, marking the end of one chapter and the exciting beginning of another.
A New Chapter
We are thrilled to announce the grand opening of our new location at 2601 S Lemay Ave., Suite 30, Fort Collins, CO 80525. This new space is a testament to Cesar’s unwavering dedication to his craft and his passion for providing an exceptional dining experience.
