We’re excited to share that a newly published article in the Coloradoan captures our evolving journey and our passion for bringing authentic Mexican flavors to Fort Collins. It spotlights our humble beginnings, when our founders—Cesar Lopez and Berenice Longoria—handled everything themselves, from cooking to managing the books. We started out with one modest food cart in Old Town before adding a food trailer in 2015, and now we’re preparing to launch our first food truck—complete with breakfast options like egg-topped chilaquiles—in the coming weeks.
Earning the trust of the Fort Collins community wasn’t always easy. Some people doubted our founders due to their youth, but we found incredible support from local favorites like Bill Almquist of Waffle Lab. Thanks to the encouragement we received, we expanded our menu beyond classic steak street tacos to include chicken, pork, enchiladas, nachos, sandwiches, and salads. While we’ve adapted some dishes for local tastes, we remain committed to showcasing traditional Mexican fare—exactly why we’re so thrilled to introduce more authentic breakfast items.
Looking ahead, our ultimate dream is to open a brick-and-mortar restaurant here in Fort Collins, giving us the chance to prove The Taco Stop is so much more than tacos and quesadillas. We’re grateful for all the love and support that helped us grow, and we can’t wait to see where this journey takes us next!
